1 cup creamy peanut butter
1/2 cup butter softened
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tablespoon vanilla extract
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
Instructions
- Preheat the oven to 350 F. Line 2 baking pans with parchment paper, if desired.
- In a large mixing bowl, cream together the peanut butter, butter, sugar and brown sugar until smooth & creamy.
- Add the egg and vanilla extract, mixing until well combined.
- In a small bowl, whisk together flour, baking powder, and salt. Stir the flour mixture into the butter mixture until combined.
- Scoop the dough into 1-inch balls and roll in white sugar if desired. Place them on the baking sheet.
- Using a fork, press down on each dough ball to flatten, making a criss-cross pattern.
- Bake for 8-9 minutes, being careful not to over bake. Allow cooling on the baking sheet before transferring to a wire rack.
Notes
These cookies keep well for a couple of days in an airtight container. Adjust baking time to achieve your preferred level of softness.
