These Easy No Bake Pumpkin Cheesecake Balls are delightful bites bursting with fall flavors, perfect for any gathering or a sweet treat at home.
Ingredients
8 oz (226g) cream cheese
block-style
softened to room temperature
1/2 cup (120g) pumpkin purée
blotted
3/4 cup (85g) powdered sugar
sifted
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
1/8 teaspoon fine sea salt
1 1/4 to 1 1/2 cups (120–150g) very fine graham cracker or gingersnap crumbs
plus more for garnish
16–20 oz coating chocolate or candy melts (white
milk
or dark)
2–3 teaspoons neutral oil or refined coconut oil (optional
for thinning chocolate)

Instructions
- In a mixing bowl, combine the softened cream cheese, pumpkin purée, powdered sugar, vanilla extract, pumpkin pie spice, ground cinnamon, and fine sea salt. Mix until smooth and well combined.
- Gradually add the graham cracker or gingersnap crumbs, mixing until fully incorporated. The mixture should be firm enough to hold its shape.
- Using your hands, form the mixture into small balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
- In a microwave-safe bowl, melt the coating chocolate or candy melts, adding neutral oil if desired to thin. Stir until smooth.
- Dip each pumpkin cheesecake ball in the melted chocolate, coating evenly, and return them to the baking sheet. Optionally, sprinkle with extra crumbs or festive sprinkles before the chocolate sets.
- Refrigerate the balls for about 30 minutes to allow the chocolate to harden. Serve chilled or at room temperature.
