1 cup boiling water
3 tablespoons cornstarch

Instructions
- Prepare the strawberries by removing the tops and halving them if they are large.
- In a medium saucepan, combine 1 pound of the strawberries with the granulated sugar. Let it sit for about 10 minutes to allow the strawberries to release their juices.
- In a separate bowl, mix the cornstarch with a small amount of the boiling water to create a slurry.
- Add the remaining boiling water to the saucepan with the strawberries and sugar. Stir constantly over medium heat until the mixture begins to bubble.
- Once bubbling, add the cornstarch slurry and continue to stir until thickened.
- Remove from heat and stir in the vanilla extract. Gently fold in the remaining strawberries.
- Let the filling cool before using it in your favorite dessert or pie crust.
Notes
