  • Total Time: 50
  • Yield: 4 servings 1x

Description

Mini Pecan Pies are delightful bite-sized treats with a flaky crust and a rich, gooey filling of pecans, brown sugar, and eggs. Perfect for holidays or as a sweet indulgence any time.

Ingredients

Scale

1 cup all-purpose flour

1/2 cup unsalted butter (cold)

1 pinch salt

1 cup chopped pecans

3/4 cup packed brown sugar

2 large eggs

1 teaspoon pure vanilla extract

1/2 cup light corn syrup

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine flour, cold butter, and salt, and mix until the texture is crumbly.
  • Press the mixture into mini pie tins to form the crusts.
  • In another bowl, whisk together the eggs, brown sugar, corn syrup, and vanilla extract until smooth.
  • Stir in the chopped pecans.
  • Pour the filling into the prepared crusts, filling each one about 3/4 full.
  • Bake for 25-30 minutes or until the filling is set and the crust is golden brown.
  • Let cool before serving.

Notes

For best results, use cold ingredients and do not overmix the pie crust to keep it flaky.
