Ingredients

1 cup all-purpose flour
1/2 cup unsalted butter (cold)
1 pinch salt
1 cup chopped pecans
3/4 cup packed brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup light corn syrup
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, cold butter, and salt, and mix until the texture is crumbly.
- Press the mixture into mini pie tins to form the crusts.
- In another bowl, whisk together the eggs, brown sugar, corn syrup, and vanilla extract until smooth.
- Stir in the chopped pecans.
- Pour the filling into the prepared crusts, filling each one about 3/4 full.
- Bake for 25-30 minutes or until the filling is set and the crust is golden brown.
- Let cool before serving.
Notes
For best results, use cold ingredients and do not overmix the pie crust to keep it flaky.
