Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  • In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
  • Add the eggs, apple cider, and vanilla extract to the creamed mixture, mixing until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 12-15 minutes or until the edges are slightly golden.
  • Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
  • To prepare the caramel filling, melt the butter in a saucepan over medium heat.
  • Stir in the brown sugar and heavy cream, bringing to a gentle boil while stirring continuously.
  • Remove from heat and stir in the vanilla extract. Let cool slightly.
  • Once the cookies have cooled, spread a generous amount of caramel filling on the flat side of one cookie and top with another cookie to create a sandwich.

Notes

For a gluten-free option, use a gluten-free flour blend. Coconut sugar can be used as a healthier alternative to brown sugar. For a lighter filling, substitute half of the butter with unsweetened applesauce.
